This Marble angel food cake recipe is delightful just the way it is, but you can dress it up for a special occasion by adding whipped cream and strawberries.

Any chocolate recipe is greatly improved by using top quality chocolate. If not available locally, I recommend the excellent offerings found at ChocolateSource.
For this recipe, I recommend a good mixer like the KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White. The egg whites require thorough beating.
Marble Angel Food Cake Recipe
- 1 cup sifted cake flour
- 1 1/2 cups sifted icing sugar
- 12 large egg whites (or 1 7/8 cups)
- 1 1/2 tsp cream of tartar
- 1/4 tsp salt
- 1/2 tsp almond extract (optional)
- 1/2 tsp vanilla
- 1 cup granulated sugar
- 2 tbsp sifted cocoa
- 3 tbsp soft butter
- 3 cups unsifted icing sugar
- 6 tbsp 10% cream
- pinch of salt
- 15 drops yellow food coloring
- 2 squares unsweetened chocolate, melted
Method for the Marbled Angel Cake Recipe
Sift the flour and icing sugar together at least twice.
In a large mixing bowl, beat the egg whites, cream of tartar, salt, almond extract and vanilla until foamy. As you beat, sprinkle the granulated sugar over top, two tablespoons at a time. Mix for approximately twenty minutes, until the batter is very stiff.
Remove the beaters. Carefully sift the flour/sugar mixture over, and fold in. Just fold until everything is incorporated. Be careful not to over mix at this time, as you want to retain the airy lightness of the batter.
Put half of this mixture in a separate bowl and carefully fold in the sifted cocoa.
Spoon great gobs of batter into an ungreased tube pan with a removable center. (ie the Cuisinart Chef’s Classic Nonstick 9-Inch Tube Cake Pan)
Alternate between white and chocolate layers to get the marbled angel food cake recipe effect. When batter is all in pan, take a knife and swish through to the bottom a few time. This removes bubbles of air.
Bake at 350 ° for 55 minutes, approximately. The cake is done if, when touched, the dent you form does not remain.
Turn upside down (ie hang over a wine bottle) for one hour. Next, get a long, slender knife and loosen along sides and along tube, if necessary. Lift out. Loosen the bottom with a knife if necessary. Invert on a serving plate. Cool thoroughly and ice.

Beat all icing ingredients together until smooth, and spread over the cake.
